THE humble Brussels sprout is set for a makeover this Christmas - in the form of an ice cream dessert at a restaurant in London Bridge.
Vivat Bacchus is to serve the dish - thought to be the first of its kind - with a turkey jelly and cranberry foam to turn the traditional Christmas dinner "upside down".
Stuart Ferguson, head chef at Vivat Bacchus, has created a menu starting with a mincemeat and gruyere pie starter followed by a duck and orange Christmas pudding main course.
Mr Ferguson, 35, said his menu was designed to bring a much-needed update to a traditional meal eaten by millions.
He said: "Let's face it, it may be eaten by the vast majority of people celebrating Christmas but it's rarely something to truly look forward to.
"I have tried to retain the spirit of Christmas but doing things in a way no one will ever have seen before.
"It's taken weeks to develop but I'm delighted with the results."
The restaurant will offer the £35 menu, which needs to be booked a day in advance, from Monday at its London Bridge outlet.
