Carrot fritters with purple sprouting broccoli

Cook time: 20mins
Serves: 4
Ingredients:
1garlic clove roughly chopped, 2.5cm fresh root ginger chopped, large bunch coriander, 250g purple sprouting broccoli stalks trimmed, 6tbsp veg oil. For fritters: 5-6carrots grated, 2eggs, 50g plain flour, 1tsp caster sugar, ½tsp ground cumin
Method:
Set oven 180*C/GM4, mix carrots, eggs flour, sugar, cumin in a bowl. Blitz garlic, ginger, coriander stalks in a blender. Boil broccoli 2mins, refresh under cold water. Sizzle paste in a roasting tin on the stove for 1min. Add broccoli, toss well to coat. Transfer to oven, roast 5-6mins. Heat 4tbsp oil in saucepan until piping hot, drop dollop at a time of batter, fry until golden brown. Serve with broccoli.
